  • 1½ pounds boneless and skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves chopped garlic
  • 1 tablespoon minced fresh ginger

Instructions

  1. Start by placing the boneless and skinless chicken thighs in either a large bowl or a gallon-sized Ziploc bag.
  2. Combine the soy sauce, brown sugar, pineapple juice, chopped garlic, and minced ginger in a medium bowl. Whisk until the sugar is completely dissolved.
  3. Pour the marinade over the chicken. Seal the bag or cover the bowl and let marinate in the refrigerator for at least 4 hours, preferably overnight.
  4. Retrieve the chicken when ready to cook, saving the marinade. Let the marinade simmer in a saucepan over medium heat for 5-10 minutes until reduced.
  5. Preheat your grill to medium-high heat. Place the chicken on the grill, brushing with some of the hot marinade. Grill for about 6-8 minutes per side until the internal temperature reaches 165°F.
  6. Transfer the grilled chicken to a baking dish and pour the remaining hot teriyaki sauce over the top. Serve hot!

Notes

Marinate overnight for the best flavor. Store leftovers in an airtight container for up to 3 days.
