Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Prepare the vegetables by washing, peeling, and dicing the sweet potatoes and halving the Brussels sprouts.
  2. Heat the olive oil in a large skillet over medium heat until it shimmers.
  3. Add the diced sweet potatoes to the skillet, season with salt, pepper, garlic powder, and smoked paprika. Sauté for about 10 minutes.
  4. Add the Brussels sprouts to the skillet, stir together and cook for another 8-10 minutes until the sprouts are tender and crisp.
  5. Taste and adjust seasoning as needed.
  6. Serve warm, topped with optional ingredients if desired.
