  • 454 g lean ground beef
  • 4–6 medium Russet potatoes
  • 28 g taco seasoning
  • 120 ml water
  • 120 g sharp cheddar cheese, shredded
  • 120 ml sour cream
  • 25 g green onions, chopped
  • 85 g fresh tomatoes, diced

Instructions

  1. Preheat your oven to 200°C. Wash and scrub the potatoes thoroughly under running water to remove any dirt.
  2. Pierce each potato several times with a fork to prevent bursting while baking.
  3. Arrange the potatoes directly on the oven rack and bake them for 45–50 minutes until fork-tender.
  4. Heat a large skillet over medium heat. Add the lean ground beef and cook until browned, breaking up clumps with a spoon.
  5. Add the taco seasoning and water to the beef. Stir to combine and let simmer for 5 minutes.
  6. Slice each baked potato lengthwise and fluff the interiors with a fork.
  7. Spoon the seasoned beef over each potato and top with cheese, sour cream, green onions, and diced tomatoes.
  8. Serve hot, ensuring the cheese is melted and gooey.

Notes

For extra flavor, add diced jalapeƱos. Leftovers can be stored in the fridge for up to 3 days.
