Ingredients

Scale
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup heavy cream
  • ¼ cup unsalted butter
  • 1 tablespoon vanilla extract
  • 1 ½ cups pecans

Instructions

  1. Prepare the baking sheet by lining it with parchment paper or a silicone mat.
  2. In a medium saucepan, combine the granulated sugar and brown sugar.
  3. Pour in the heavy cream and add the butter, stirring gently over medium heat until smooth.
  4. Bring the mixture to a boil while stirring constantly until it reaches a soft-ball stage (around 235°F).
  5. Remove from heat, then stir in the vanilla extract and pecans.
  6. Let the mixture cool slightly, then scoop out and form onto the prepared baking sheet.
  7. Allow the pralines to sit at room temperature for about an hour or until firm.

Notes

Store in an airtight container at room temperature for up to two weeks. You may refrigerate if humidity is high.
