Ingredients

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 ½ cups all-purpose flour (can substitute with whole wheat or gluten-free)
  • 1 cup sugar (brown or coconut sugar works great)
  • ½ cup almond milk (or any plant-based milk)
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • Optional: ½ cup nuts or dried fruits (such as walnuts or raisins)

Instructions

  1. Peel and cube the sweet potatoes, then boil until tender. Drain and mash until smooth.
  2. In a large bowl, combine the mashed sweet potatoes, almond milk, and vegetable oil.
  3. In another bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Stir in any optional nuts or dried fruits.
  5. Grease a loaf pan and pour the batter into it, smoothing the top with a spatula.
  6. Preheat your oven to 350°F (175°C) and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store in an airtight container at room temperature for 3–4 days. Can be frozen for up to 3 months.
