Ingredients

  • 1 cup green or brown lentils, cooked until tender
  • 2 cups vegetable broth
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 cups mashed potatoes
  • Olive oil, for sautéing
  • 1 cup frozen peas

Instructions

  1. In a pan, heat a drizzle of olive oil over medium heat. Sauté onions, carrots, celery, and garlic for 5-7 minutes until they’re soft.
  2. In a pot, combine cooked lentils, sautéed vegetables, vegetable broth, thyme, paprika, salt, and pepper. Let it simmer for 10 minutes to meld flavors.
  3. Pour the lentil mixture into a slow cooker, spreading it evenly.
  4. Spread a generous layer of mashed potatoes over the lentil mixture, smoothing it out with a spoon.
  5. Cover and cook on low for 240 minutes or on high for 120 minutes, until heated through.
  6. For a golden top, broil the assembled pie in the oven for 3-5 minutes, watching carefully.
  7. Let it sit for a few minutes before serving; enjoy this comforting dish!

Notes

You can customize the vegetables and use canned lentils for convenience. Leftovers can be stored in the refrigerator for up to 4 days.
